Giving Thanks-Thanksgiving Day

We traveled to central La. to Wed afternoon to spend Thanksgiving Day with our family. I'm truly beginning to think that Thanksgiving is my favorite holiday. No not because of the food, cause I actually had lost weight the day after....woo hoo!! But Christmas is so comerciaized and the rush and spending money we don't have, forgetting the true meaning. I absolutely HATE the fact that people want to rush past Thanksgiving to get the lights, tree and etc put up. If you are one of them.....oh well. I refuse to do that. I'm giving Thanksgiving Day its due. God has and is far to good to me to not give Thanks! We actually had 2 days of Thanksgiving. This year our family was in every direction because the kids are growing and getting kids of their own, so its hard. Toot Toot(Rece) was the only baby on the place so of course he got showered with ALL the attention....and he loved it! This is the afternoon we arrived, the first of 3 baths in a 24 hr period Here he is with his Great Grandmother, my hubby's mother
Here he is with his PiPi Tommy. They are hunting buddies

When Life Gives You Lemons....

...You make sweet yummy Lemon Curd

This is another bowl that belonged to my grandmother. I love using her things and only wish that I had more to be able to pass a few to my girls

Sweet yummy stuff

Most people don't know the history behind curds nor what to eat them with. The originated in England and you can make different flavors. I love lemons so I made Lemon Curd. You can use i on scones, bread, cakes. Its devine!

The finished product. Another one of my homemade treats tat I'm gonna pass around for the holidays

Lemon Curd

3/4 C freshly squeezed lemon juice
1 Tbsp grated lemon zest
3/4 C sugar
3 eggs
1/2 C unsalted butter
Directions:In a saucepan, combine all ingredients and cook over medium-low heat*. Cook 6-10 minutes, and occasionally whisk until thick enough to hold marks from the whisk (about the consistency of pudding.) Store in the refrigerator.*If the heat is turned up too high, the eggs will curdle. It really makes a huge difference when you make this with fresh lemons, so use them if you can. I had 4 large lemons that netted 1 cup of juice. I added enough to make 1 1/2 cups and doubled my recipe and made 3 jars.
Happy Squeezing!!!!

A Recipe, A Bowl, A Cup and the Fireplace...

So I loveeeeee making homemade treats for my family and friends. So when that first chill makes its appearance I make the first of my homemade treats....Hot Chocolate. I love to find glass containers, fill them up, tie a ribbon around it and pass them on. There is nothing more relaxing then a cup of cocoa in front of the fireplace. Enjoy!!! This is a very old bowl that my grandmother used when I was a child. I rarely use it because I'm affraid of breaking it, but I love using glass bowls verses plastic and it brings back such sweet memories that make this time of year even sweeter.
A few simple ingredents and airtight containers are all you need to make this dry powder cocoa mix that is absolutely fabulous. Much better then store bought

And the finished product. You can use really expensive jars are just the inexpensive ones like I got from the Dollar Store. Tie a ribbon, attach a gift card and you're set to go.

Now of course you need the recipe and I must confess, its not mine. My dear friend Michelle shared it in a church cookbook. We make it every fall.
1-25oz box of powdered milk
1-13oz box of Neslte Quik
1-6oz jar of coffee cream
Mix everything together and store in airtight container. When ready to serve fill cup/mug 1/4 to 1/2 full depending on the richness you like. Add boiling water and stir. Makes 1 gallon
